Hearty Dinner Salad with Steak

It’s been a while since I’ve posted a recipe.  This is pretty much because I really hate the kitchen in our apartment – it’s small, doesn’t have enough counter space, cabinet space, or room in general, and our dishwasher tends to leave dishes dirtier than they started.

Rob and I made some big strides this weekend towards making it more livable, though.  At least the counter tops are clear of clutter.  While I don’t think I’ll ever enjoy cooking here, it’s at least much better than it was.

To celebrate our newly inhabitable kitchen, I made this.

A nice hearty salad with Quinoa, tomato, hearts of palm, and steak. I thought the addition of the Quinoa gave it a nice texture and a slightly nutty flavor.  It was very filling and quite satisfying.

Really, you could add just about anything you want, but to make this one…

Hearty Dinner Salad

1 cup cooked Quinoa
1 medium tomato, diced
diced hearts of palm
1 bag fresh salad
light vinaigrette – I used 5 teaspoons olive oil and 2 teaspoons red wine vinegar
salt and pepper to taste
1 steak cooked medium rare and sliced
