Luck and Chance

Have you ever gotten around to cooking dinner only to realize you are surprisingly lacking in the food you have available to cook?  I certainly have.  In fact, this very situation was the cause for the pasta dish I invented.  Luckily, it turned out really well and this is not another food failure.

I had dry pasta, a head of broccoli, garlic, and some turkey bacon.  (Well, I had other things, too – but I thought these went together pretty well.)

From that I made pasta with broccoli garlic pesto and crunchy bacon sprinkles.

Pretty, right?

And it was incredibly easy.

Broccoli Pesto Pasta with Turkey Bacon

1/2 lb pasta, any shape
1 large head of broccoli
1 clove garlic
8 slices cooked Turkey Bacon, chopped
Olive Oil
Salt and Pepper

Cook the pasta as directed.

Chop the broccoli into small florets, chop garlic clove (but not too finely), and steam both.  When broccoli and garlic are soft, put them in a food processor with Olive Oil and salt.  Puree.  Continue to add Olive Oil until you have the desired consistency of pesto.

Cook Turkey Bacon to your desired consistency – I thought lightly crunchy was nice. Chop coarsely.

Combine pasta, pesto, and bacon.  Season to taste.
